Black vinegar.
Comes in a bottle, dark color has a bold, smokey flavor and
slightly sweet. Made of fermentation of a mixture of rice, wheat,
and millet or sorghum gives black vinegar its unique characteristics.
Used for braised dishes, sour soup, stew, and table codiment
for dumplings.
Alternative to black vinegar's robustness, you can used Chinese
red vinegar for a mild, light, and smooth flavor. To over come
the sourness if too much vinegar, add sugar to neutralize until
it right. Apple cider vinegar cannot be used as alternative.
Store Chinese black and red vinegars in a cool, dry place
for several months.
