Dried tangerine peel.
Dried citrus peel is usually made from tangerines or mandarins
oranges and used to flavour braised, smoked and stir-fried dishes.
It is different form Sunkist orange peel. Mandarins oranges
peel are tinner and easier to peel. The peel or skin will not
stick to the orange pulp.
Drying the peel concentrates the flavour, but you can use fresh
peel if necessary. Chinese dried citrus peel can be found in
Cellophane or plastic packets. Soak the required amount of peel
in warm water until it softens, then chop or slice it according
to the recipe.
Used in soup, hot or cold dessert. example red bean soup.
Store in a jar or a zipper lock plastic bag in the fridge, keep
dry.
