Shrimps with Broccoli Recipe
Crunchy broccoli with succulent shrimp with a touch of wine
flavor. How can one resist this dish? Goes well with a bowl
of steam rice, properly two bowls!
Ingredients :
8 medium gray shrimp, peeled with tail on and deveined
1 slice fresh root ginger, peeled and finely chopped
1 tablespoon rice wine or dry sherry
1 egg white
1 teaspoon cornflour
1 tablespoon garlic, chopped
3 tablespoons vegetable oil
2 spring onions, finely chopped
250 gm broccoli, cut into florets
1 teaspoon salt
1/2 teaspoon sugar
Method :
Wash the shrimps, pat dry on kitchen paper. Put the shrimps
in a small bowl with the ginger, rice wine or sherry, egg white
and cornflour.
Stir well and leave in a cool place or in the refrigerator to
marinate for about 20 minutes.
Heat 1 tablespoon of the oil in a wok, add garlic stir-fry until
fragment then add marinate shrimps mixture.
Stir-fry over a moderate heat for about 30 seconds. Remove from
the wok with a slotted spoon.
Heat the remaining oil in the wok.
Add the spring onions and broccoli and stir well. Add the salt
and sugar, then stir-fry until the broccoli is just tender.
Stir in the cooked prawns and serve hot.
Tips :
-During stir-frying broccoli (without shrimp), cover wok with
lid this will cook broccoli faster.
-A dash of pepper can be added for extra flavor.
